Cajun Shrimp Pappardelle Alfredo 

I always love a good fettuccine Alfredo so I decided to put a twist on it and make a C A J U N shrimp pappardelle Alfredo - rich, full of flavor and it hits you with that spice // This is an easy and comforting dish that will have everyone wanting more!

INGREDIENTS: 

⁃ 1.5 pounds large shrimp shell on (you can deshell if you prefer) 

⁃ 8 oz pappardelle pasta 

⁃ 1 pound andouille sausage cut into small pieces 

⁃ 1 yellow onion diced

⁃ 4 garlic cloves minced 

⁃ 2 tablespoons Cajun seasoning 

⁃ 1 teaspoon black pepper 

⁃ 1/4 teaspoon cayenne pepper 

⁃ 1/4 cup chicken broth

⁃ 1 cup heavy cream 

⁃ 1.5 cup grated Parmesan cheese 

⁃ 2 tablespoons olive oil

⁃ Small bunch minced parsley 


INSTRUCTIONS: 

1. In a small mixing bowl, combine shrimp and Cajun seasoning. Mix well. 

2. In a medium pan, add oil on medium heat. Add shrimp and cook for 5 minutes or until shrimp is cooked.

3. Remove shrimp from pan and set aside. 

4. In a large pot, boil water and add salt. Cook pappardelle per instructions.

5. In the same pan, add sausage and onions. Cook until onions are translucent and sausage are caramelized.

6. Add garlic and cook for 45 seconds. 

7. Add chicken stock, cream, Parmesan cheese, black pepper and cayenne pepper. Stir throughly until combined. 

8. On medium heat, simmer for about 5 minutes until sauce has thickened, making sure to stir and keep an eye on it. 

9. Add shrimp and pappardelle pasta to pan. Toss and combine until pasta and shrimp is evenly coated with sauce. 

10. Serve and garnish with parsley.
