Chicken Noodle Soup

This Seattle weather today made me crave C H I C K E N noodle S O U P so I made one of my simplest recipes // So easy and just a couple ingredients!

INGREDIENTS:

- 1 pound carrots diced

- 2 hearts celery diced

- 1 large white onion diced

- 2 pounds chicken thighs

- 1 quart chicken broth

- 2 quarts water

- 2 teaspoon olive oil

- Fresh dill

- Salt and pepper for taste

- 1 pound noodles of your choice, I like penne

INSTRUCTIONS:

1. In a large pot brown onion, carrots and celery. Add salt and pepper to your liking.

2. Add chicken thighs to bottom of pot and cook for 2 minutes, then flip chicken over and cook for another 2 minutes until both sides are brown.

3. Add chicken stock and water. Let come to a boil then turn down to simmer.

4. Leave on simmer for at least 15-20 minutes. The more time the tastier then broth.

5. Once chicken is fully cooked, take out, shred, then put back in soup. Leave on simmer.

6. In a separate pot cook pasta in salt water per instructions.

7. Put pasta in a bowl, add chicken soup and garnish with fresh dill.
