Japanese Beef Curry

Dinner plans? If not, this is a quick recipe that anyone would enjoy! This dish is so flavorful and only needs six main ingredients. 

 

INGREDIENTS:

- 4 large carrots chopped into chunks

- 4 large potatoes chopped into chunks 

- 1 large white onion diced 

- 1.5 pounds stew cut beef 

- 1 packet Golden Curry Japanese curry mix (usually available at most Asian stores) 

- 4 cups chicken or beef stock

- Salt and pepper for taste 

- Olive oil

 

INSTRUCTIONS: 

1. In a large pot, add oil and cook white onions till golden then add carrots and potatoes. Cook for 5 minutes.

2. Add beef and cook for 5 minutes or until it is fully cooked.

3. Pour in the beef/chicken stock and let it come to a boil. Once it comes to a boil bring it down to simmer for 15 minutes to let all the flavors combine.

4. Add curry cubes, salt and pepper for taste. Let cook for 5 more minutes then serve with white rice or even noodles! 

*I like to add a soft boiled egg on the side as well!
