Japanese Chicken Curry
Japanese chicken curry is such a simple yet tasty dish. You can eat it with rice, noodles or even bread // I make this a couple times a year so it’s definitely a staple for me!
INGREDIENTS:
- 4 large carrots chopped into chunks
- 4 large potatoes chopped into chunks
- 1 large white onion diced
- 1.5 pounds chicken breast cut into small pieces
- 1 packet Golden Curry Japanese curry mix (usually available at most Asian stores)
- 4 cups chicken broth
- Salt and pepper for taste
- Olive oil
INSTRUCTIONS:
1. In a large pot, add oil and cook white onions till golden then add carrots and potatoes. Cook for 5 minutes.
2. Add chicken and cook fully.
3. Pour in the chicken broth and let it come to a boil. Once it comes to a boil bring it down to simmer for 15 minutes to let all the flavors combine.
4. Add curry cubes, salt and pepper for taste. Let cook for 5 more minutes then serve with rice, noodles or bread.
