Chili

This weather calls for something warm, hardy and comforting… C H I L I definitely came to mind // This version is a little thicker so you can eat it as is or top it off on a hot dog, biscuits or even as a dip for chips! 


INGREDIENTS:

⁃ 1 sweet onion very finely minced

⁃ 3 carrots chopped 

⁃ 2 pounds ground beef 

⁃ 8 oz tomato sauce

⁃ 15 oz kidney beans rinsed

⁃ 1 cup chili seasoning

⁃ 2.5 cups water 

⁃ Salt and pepper for taste

⁃ Oil

⁃ Cheddar cheese

⁃ Sour cream

⁃ Green onions minced

⁃ Cilantro minced

⁃ Jalapeños cut 


INSTRUCTIONS:

1. In a medium pot add oil and onions, cook until golden.

2. Add ground beef, break up meat and stir until cooked. 

3. Pour in tomato sauce, kidney beans, carrots, chili seasoning, water, salt and pepper. 

4. Cover and let cook for 1.5 hours, constantly check on it and stir every 15-20 minutes. 

5. Serve and top with cheddar cheese, sour cream, green onions, cilantro and jalapeños.
