Shrimp Ceviche

Shrimp C E V I C H E is so simple to make and is such a great appetizer // I served mine with tortilla chips but you could serve it with anything you want; flatbread, tostadas.


INGREDIENTS: 

⁃ 2 pounds shrimp cooked, de shelled and cut into small pieces

⁃ 2 tomatoes not too ripe, seeded and diced

⁃ 2 avocados not too ripe, peel, seeeded and chopped 

⁃ 1 red onion thinly diced

⁃ 1 large cucumber peeled and diced

⁃ 1 small bunch cilantro chopped 

⁃ 1 lemon juice squeezed out 

⁃ 1 lime juice squeezed out 

⁃ Garlic salt and pepper for taste 


INSTRUCTIONS: 

1. Place shrimp, tomatoes, avocados, red onion, cucumber and cilantro in one large bowl. 

2. Pour lemon and lime juice to mixture, add garlic salt and pepper. 

3. Mix well making sure everything is coated with lime/lemon juice, garlic salt and pepper.
