Kimchi Carbonara

Sometimes I just crave the most random combinations and when I cook it all together it tastes good… I’m never afraid to experiment // If you love kimchi and pasta, you’ll love this kimchi C A R B O N A R A - this was delicious and so simple to make!


INGREDIENTS:

⁃ 16 ounce spaghetti noodles (you can use any pasta you love)

⁃ 4 strips bacon cut into small pieces 

⁃ 2 cups kimchi chopped and drained 

⁃ 4 eggs 

⁃ 1 cup Parmesan 

⁃ Green onions chopped in large pieces 

⁃ Black pepper 


INSTRUCTIONS: 

1. Boil large pot of water with salt.

2. While waiting for water to boil, crack eggs into a large bowl, add Parmesan, black pepper and scramble together well. 

3. Once water is boiled, add pasta and cook per instructions. 

4. In a large pan cook bacon until crispy. Remove and set aside. 

5. In the same large pan, cook kimchi until caramelized. Remove and set aside. 

6. Once pasta is cooked, drain and leave some pasta water aside. 

7. Add pasta to the egg, Parmesan and black pepper mixture right away and stir together quickly, adding a bit of pasta water. 

8. Add bacon and kimchi to pasta and mix well.

9. Once all mixed in thoroughly start plating and top with Parmesan, black pepper and green onions, enjoy!
