Linguine and Clams

INGREDIENTS:
- 2 pounds clams
- 1 pound linguine
- 6 tablespoons olive oil
- 6 garlic cloves minced
- 2 shallots finely minced
- 1 cup dry white wine (Pinot Grigio, Chardonnay or Sauvignon Blanc)
- 1/2 teaspoon red pepper flakes
- 3 tablespoons butter
- 1 cup fresh parsley
- 1- 2 lemon for juice (to your liking)
- Salt and pepper for taste
INSTRUCTIONS:
1. Cook pasta in salt water per instructions.
2. In a large pan heat up the olive oil. Add shallots and garlic, cook for 30 seconds and make sure they don’t burn.
3. Add wine, salt, pepper, red pepper flakes, clams and 1/2 cup parsley. Bring to a simmer, cover and cook for 6-8 minutes until clams all open.
4. Add pasta to clams, turn heat up a little and let the pasta absorb the liquid. If it gets too dry, add some pasta water.
5. Remove pan from heat, add butter, lemon juice and the remaining 1/2 cup of the parsley.
