Shrimp Pad Thai

This is a dish I always order when I am at a Thai restaurant, but I didn't know how easy it was to make. I ended up making two batches because my family inhaled it so fast!

 

INGREDIENTS: 

- 8 oz flat rice noodles

- 3 garlic cloves minced

- 1 pound uncooked shrimp cut into small pieces 

- 3 eggs scrambled 

- 1 cup fresh bean sprouts 

- 1/2 cup green onions chopped 

- 1/2 cup chives chopped 

- 1/2 cup cilantro chopped 

- 2 lime cut in half 

- Olive oil 

 

INGREDIENTS for pad Thai sauce: 

- 3 tablespoons fish sauce 

- 2 tablespoons soy sauce (I use liquid aminos)

- 10 tablespoons brown sugar 

- 4 tablespoons rice vinegar 

- 2 tablespoons sriracha or hot sauce

 

INSTRUCTIONS: 

1. In a medium size bowl, add all pad Thai sauce ingredients together, mix thoroughly and set aside.

2. Heat up oil in a large pan or wok.

3. Add garlic and shrimp. The shrimp should only take 1-2 minutes to cook. 

4. Push everything aside in the pan and pour in scrambled eggs. Cook egg, breaking into little pieces.

5. Add noodles, bean sprouts, green onions and chives to the pan. 

6. Add sauce and toss thoroughly to combine all ingredients. 

7. Serve topped with cilantro and lime
