Spaghetti Squash with Garlic Lemon Shrimp

I’ve been eating this spaghetti S Q U A S H for a while now and let me tell you - it’s just as good as noodles and you guys know I love noodles // This is just a healthier option for those days you don’t want the carbs - so simple and tasty, I know you guys will love it! #eatinginheels #spaghettisquash #garlicshrimp

INGREDIENTS: 

⁃ 2 pounds shrimp de shelled 

⁃ 2 large spaghetti squash cut in half and de seeded 

⁃ 1 clove garlic minced

⁃ 2 lemons cut in half and squeezed 

⁃ 3 sprigs green onion diced

⁃ Handful arugula 

⁃ 1/2 cup Asiago cheese (or cheese of your choice)

⁃ 3 tablespoons cooking oil 

⁃ Salt and pepper for taste 


INSTRUCTIONS:

1. Heat oven to bake at 425 degrees.

3. Add salt, pepper and oil to spaghetti squash. 

4. Place spaghetti squash into oven for 40 minutes. Take out and let cool.

5. In a large pan add garlic and oil, stir evenly for 30 seconds (you can start this once the spaghetti squash has been cooked and cooling down).

6. Add shrimp and cook for 2-3 minutes on both sides. 

7. Once shrimp is cooked, add one lemon juice. 

8. Take shrimp off heat and add a handful of arugula. 

9. Use a fork and scrape the spaghetti squash.

10. Plate with spaghetti squash first, top with garlic lemon shrimp, Asiago cheese and some more squeezed lemon, enjoy!
