Spring Rolls

If you need something quick, healthy and tasty to make this is the perfect recipe for you. The great thing about this is that you can add any of your own ingredients you want to wrap into it. I personally love herbs so I used a ton of it! 

 

INGREDIENTS for spring roll:

- 1 pound de-shelled raw shrimp 

- 1 pack rice paper roll

- 3 cups sake 

- 3-5 bunches of any herbs you love (I used mint, chives and a few other Asian herbs) 

- 3 cucumbers sliced 

- 1 tablespoon salt 

 

INGREDIENTS for sauce: 

- 2 cup leftover sake 

- 1 cup hoisin 

- 1/2 peanut butter 

- 1 tablespoon sriracha 

 

INSTRUCTIONS for spring roll:

1. In a medium saucepan, add the sake, salt and let come to a low simmer.

2. Add shrimp and cook for about a minute (30 seconds each side). 

3. Take shrimp out and save sake juice 

4. Let shrimp cool down and cut into halves. 

5. Wash all herbs, cucumber and prep for wrapping.

INSTRUCTIONS for sauce: 

1. Take the leftover sake juice and pour into a small pot. 

2. Add the remaining ingredients. 

3. Stir until it is all evenly mixed. 

4. Let come to simmer, turn heat off, let cool before serving.
