Sweet Potato & BBQ Chicken
This sweet P O T A T O & bbq C H I C K E N is still such a hit, we’ve been having this dish for a couple months now and still aren’t sick of it // The best part is it’s easy, tasty and healthy… can’t get much better than that!
INGREDIENTS:
⁃ 1 medium sweet potato
⁃ 2 medium chicken breast
⁃ Cabbage shredded
⁃ Carrots shredded
⁃ Green onion minced
⁃ Mayo
⁃ Rice vinegar (you can use any vinegar)
⁃ Sugar
⁃ Oil
⁃ Salt & pepper for taste
⁃ BBQ sauce
INSTRUCTIONS:
1. Set oven to bake at 425 degrees.
2. Clean sweet potato and poke holes in it, set on baking sheet.
3. Season chicken breast both sides with oil, salt and pepper. Set on baking sheet.
4. Bake sweet potato for 50 minutes and bake chicken for 35 minutes.
5. In a small bowl combine cabbage, carrots, green onions, mayo, rice vinegar, sugar, salt and pepper. Mixed throughly and set in fridge.
6. Once chicken is cooked take out and let cool down before shredding.
7. Once sweet potato is cooked, cut in half and put on a serving plate/bowl.
8. Top half a sweet potato with shredded chicken, coleslaw, bbq sauce and garnish with green onions or whatever you like. Enjoy with hot sauce if desired!
