Summer Shrimp Pasta Salad

Here is my summer shrimp P A S T A salad you guys have been waiting for! So perfect for a summer get together // I added my favorite ingredients but you can really just play around with it and add your favorite ingredients as well!

INGREDIENTS:

⁃ 1/2 pound fusilli pasta (use any short pasta)

⁃ 1 pound shrimp

⁃ 1/2 red onion diced

⁃ 5 garlic cloves minced

⁃ 4 tablespoons olive oil

⁃ 1/2 pound frozen corn (or fresh if you have it)

⁃ 8 stems fresh dill minced

⁃ 1 tomato diced

⁃ 12 oz grilled artichoke cut into chunks

⁃ 1.5 lemons juice squeezed

⁃ 1/2 cup parmesan

⁃ Salt and pepper for taste

INSTRUCTIONS:

1. Cook pasta per instructions and set aside after draining.

2. In a large pan, turn heat to high and add 2 tablespoons of oil, red onion and garlic. Cook for 1 minute.

3. Add shrimp, salt and pepper and cook for 3 minutes (or until cooked) making sure to flip to both sides of shrimp. Set shrimp aside.

4. In same pan, warm up corn and set side.

5. In a large mixing bowl add pasta, shrimp, corn, dill, tomatoes, artichoke, lemon juice, remaining olive oil, parmesan and salt and pepper.

6. Mix throughly, refrigerate and enjoy!
