Chicken Marsala

Had so much fun making my boyfriends moms chicken M A R S A L A - all the credit goes to him and her for this one // I love that I am able to learn these family recipes so I hope you guys enjoy this as much as I did!

INGREDIENTS for chicken:

⁃ 3 pounds chicken breast sliced thinly horizontally

⁃ 1 cup all purpose flour

⁃ 2 tablespoons salt

⁃ 2 teaspoons ground black pepper

⁃ 3 tablespoons dry parsley

⁃ 32 oz canola or vegetable oil

INSTRUCTIONS for chicken:

1. In a medium size bowl combine flour, salt, pepper and dry parsley. Mix thoroughly.

2. Place one chicken breast at a time into flour mixture and coat chicken on both sides. Repeat process until all chicken breasts are coated.

3. In a large pan add canola (or vegetable oil) to medium heat.

4. Once oil is hot, place chicken breasts into oil. Cook chicken for about 3 minutes each side or until chicken is fully cooked.

5. Place chicken on paper towels to soak up excess oil.

6. Repeat process until all chicken is cooked and set chicken aside.

INGREDIENTS for sauce:

⁃ 1 stick butter

⁃ 1 cup olive oil

⁃ 1 medium size sweet onion minced very finely

⁃ 1 pound white mushrooms sliced

⁃ 2 cups Marsala wine

⁃ 2/3 cup water

INSTRUCTIONS for sauce:

1. In a large pan turn heat to medium, add butter, olive oil and sweet onions. Sauté onions until golden.

2. Add mushrooms and cook until soft.

3. Add Marsala wine and water, turn to simmer. Stir every couple minutes for about 12-15 minutes.

4. Dip chicken breasts in Marsala sauce coating both sides, place in a flat container and pour remaining sauce into container.

5. Cook spaghetti per ingredients.

6. Plate spaghetti and top with chicken and Marsala sauce.

7. Garnish with fresh parsley, salt and pepper if desired.
