Kimchi Spam Fried Rice
If you love kimchi and spam, this is the dish for you! I added enoki mushrooms to give it a crunch, so if you’re vegetarian you can totally leave out the spam.
INGREDIENTS:
- 3 cups cooked day old rice (you can use newly cooked rice too, just set in fried for 15-20 minutes before cooking)
- 2 cups kimchi drained and sliced
- 12 oz spam (one can) cubed
- 1 small red onion diced
- 6 garlic cloves minced
- 7 oz enoki mushrooms separated
- 1 tablespoon sesame oil
- 4 tablespoons kimchi juice (that was drained from kimchi)
- 1 bunch green onion diced
- 1 bunch cilantro diced
- 4 eggs fried
- Seaweed (optimal to eat with rice)
INSTRUCTIONS:
1. In a large pan add cooking oil, red onion and garlic. Cook for 1 minute.
2. Add spam and cook for 3-4 minutes until spam is crispy and brown. Remove from the pan and set aside.
3. In the same pan add cooking oil and kimchi, cook for 1-2 minutes.
4. Add enoki mushrooms and cook until they are wilted.
5. Add in rice, kimchi juice and sesame oil. Make sure to separate rice and coat it all with kimchi.
6. Add spam back into the pan and mix well (be gentle, make sure you aren’t mixing too much so the rice doesn’t become mushy).
7. Serve with a fried egg on top, green onions and cilantro!
