Pumpkin Rigatoni

It’s fall and that means it’s pumpkin everything right? // I’m actually not a huge pumpkin fan but this pumpkin rigatoni turned out so yummy - such comfort in every bite, I’m excited for you guys to try it!

INGREDIENTS:

⁃ 12 oz rigatoni

⁃ 6 garlic cloves minced

⁃ 7 bacon slices cut into small pieces

⁃ 15 oz pumpkin purée

⁃ 1/2 cup chicken broth

⁃ 2 tablespoons butter

⁃ 10 fresh sage leaves

⁃ 1/2 cup parmesan

⁃ Salt and pepper

⁃ 1/4 cup pasta water

INSTRUCTIONS:

1. Cook rigatoni per instructions and save pasta water, set aside.

2. In a medium pan, turn heat to medium. Add bacon. When bacon is cooked add garlic and cook for 1 minute.

3. Add pumpkin purée and chicken broth, turn to simmer and let cook for 3-4 minutes occasionally stirring.

4. Add salt, pepper, butter, parmesan and sage. Let simmer for 2 more minutes occasionally stirring making sure sauce is mixed well.

5. Add rigatoni and combine all ingredients throughly then add pasta water and continue mixing until all rigatoni is coated with sauce.

6. Serve and enjoy!
