Tom Yum Shrimp Pasta

This recipe turned out so good // My T O M Y U M pasta is such a great combination of some of my favorite flavors!

INGREDIENTS:

⁃ 1/2 pound linguine

⁃ 1 stalk lemongrass (white part only) minced

⁃ 5 garlic cloves minced

⁃ 3 Thai chilis minced

⁃ 7 lime leaves minced

⁃ 1/2 white onion chopped

⁃ 2 Roma tomatoes cut into wedges

⁃ 150 grams shimeji mushrooms

⁃ 1/2 pounds shrimp

⁃ 5 teaspoons fish sauce

⁃ 2 tablespoons butter

⁃ 1/2 lime juice squeezed

⁃ 1/2 cup parmesan

⁃ Olive oil

⁃ Cilantro minced

INSTRUCTIONS:

1. Cook pasta per instructions.

2. In a large pan on medium heat, add oil and shrimp. Cook shrimp throughly and set aside.

3. In the same pan turn heat to high and add onions, cook for 1 minute then add mushrooms and tomatoes.

4. Once mushrooms and tomatoes are cooked add lemongrass, garlic, chilis and lime leaves. Cook for one minute.

5. Add fish sauce and butter.

6. Once butter is melted add cooked shrimp, pasta, 1/2 cup of pasta water and parmesan. Stir throughly and make sure all ingredients are combined.

7. Turn heat off, add lime juice and cilantro. Enjoy!
